Ingredients:
2 small sweet potatoes, cut into bite sized pieces
1 red onion, diced
1 stick celery, sliced
3 cloves garlic, chopped
Large handful of kale, shredded
1 tin black beans
1 tin chopped tomatoes
1 tin coconut milk
2-3 tbsp peanut butter according to taste
2 tbsp curry powder
Instructions:
🌿 Heat 1 tbsp olive oil and fry onion, garlic and celery until softened.
🌿 Add 2 tbsp curry powder and cook for a further minute.
🌿 Add sweet potatoes, coconut milk and tinned tomatoes and simmer with a lid on for 20 minutes.
🌿 Add the kale and black beans, cover and simmer for a further 5 minutes.
🌿 Stir through peanut butter and season with salt and pepper.
